I'd like to know if there's official information on what's the grip difference on GT3 and GTE tyre compounds, as in if the GTE SuperSoft is 100%, how many % are the softs, mediums and so on, and the same for GT3 tyres.
    Thank you in advance.

By official, you mean what's used in game? Baseline rubber difference (from 100% supersofts) is 0.63% less per tyre level for gte tyres, and twice that for gt3, with gt3 and gte being equal at softs. Thou that's rough estimation of actual grip due to tyres of different compounds (and even more between gt3 and gte) have other properties that affect grip.

So from what I understand a GT3 Medium at optimal temperature will have 98.74% of the grip that a Soft will have.
And for GTE a Soft will have 99.37% of a SuperSoft's grip.
