Improve mouse control - control gas/brake sensitivity

I'm stuck to using my controller or my mouse for the moment and I find I'm faster with a mouse (much better steering) than with the controller (not as good steering but much better throttle/brake control). I'd enjoy more to play with the mouse if the throttle/brake would not work like ON/OFF switches when you use the mouse buttons for them. I'd like to have a setting to control the sensitivity (how fast it goes from 0% or unpressed, to 100% or fully pressed) of the gas/brake buttons, like GTR 2 had.

Or as alternative, it would be nice if I could use mouse steering but have the possibility to assign the throttle to an axis of the controller. Is there at least some workaround to get it to work if you're not planning to add support for it in game?

Here's what I tried and the results:

First tested the brake, it goes from 0 to 50% almost instantly when I slowly move the joystick down. Then tested the throttle, also very slowly moving the stick up. As you can see, it still goes from 0% to max too quickly. It behaves exactly as when you just use the UP/DOWN arrows from keyboard. You can't hold the gas at 70% and keep it there for example. If you move the joystick up even for a bit, it just maxes out quickly.
