As you can see, all is predefined except speed sensivity and steering speed. With those at maximum, you will have much more control on the car; so much, that for me is more difficult to loose the car with pad than with wheel.

I know that it looks odd, but for me is crucial to have those two at very high levels. That way, you can turn much more quickly and recover the car immediately.

Here are the videos. I made the comparison with an F1, a GT3 and the LaFerrari. No TC. No ESP. Just ABS (except for the F1).

The differences in time (1 second for the wheel except with LaF where the pad has the best time) are irrelevant. I did just couple of laps with each, but you can see how much control i have with the vehicle. No mistakes and almost very smooth driving lines.

I feel Im faster with wheel, but not very much. In fact, in some corners, im better with pad (eau rouge) because with the joystick you can be much more direct.
